Spanish potato omelet

4 eggs
500 gr potatoes, peeled and sliced finel
1 medium onion finely sliced
250ml olive oil
Salt to taste
Wash potatoes, drain and salt to taste.
Pour oil in a deep pan on a medium stove. When the oil starts to heat add the potatoes and let them fry. To speed up the cooking, cover pan.

Oven roasted potato wedges

1 medium potato per person cut in wedges
3 garlic cloves, crushed
3 tbsp olive oil
1/2 tbsp sweet paprika
Salt
Put all ingredients, except for salt, in a plastic bag and coat potatoes well.
Place potatoes on an oven tray making sure potatoes are on one single layer.
Sprinkle with salt.
