Orangettes: candied orange peel covered in black chocolate

4 oranges
235 ml water
225 gr sugar
150-200 gr black chocolate
Extra water to boil orange peel

Cut orange peel in thin strips.

Boil peels in water for a few minutes. Then drain add fresh water to the pan and boil peels again so the peels lose its bitterness. Drain again.

Add sugar and water to a pan and when it boils add the orange peel and let it simmer for 45 minutes to 1 hour making sure the liquid doesn’t dry out.

When peel is cooked, remove from stove and place peel strips over a rack to cool.

Melt chocolate in bain maire or using a chocolate fondue maker.

Dip peel strips in chocolate and place them on wax paper until chocolate solidifies again.

Keep in an airtight container.
