Christmas pudding


250 gr butter
125 gr white sugar
125 gr brown sugar
4 eggs
125 gr plain flour
125 gr breadcrumbs
a good pinch of salt
375 gr raisins
375 gr sultanas
250 gr currants
1/2 tsp nutmeg
1/2 tsp allspice
1/2 tsp bicarb soda
3 tbsp brandy
1m x 1m calico cloth (which has been quickly boiled to extract any dyes or fabric conditioners)

Cream butter and sugars.
Add eggs, then brandy.
Mix fruit, flour, spices, breadcrumbs, salt and bicarb soda together.
Add to creamed mixture.
Mix well.
Tie in floured calico cloth.
Boil for 6 hours making sure pudding is covered with water at all times.
Remove from pan and hang in dry, dark spot.

The day this pudding is served, steam for 3 hours in its calico cloth.

Remove cloth and place pudding upside down on a serving plate.

Serve with brandy custard.

  1. I used your recipe for Christmas day and it was delicious.
    The only thing extra I put in was a cup of grated carrot and a whole bunch of 10c coins.
